He tosses the quinoa with shaved Brussels sprouts, baby kale, feta cheese, pine nuts and cherry tomatoes, and bathes everything lightly in an herb vinaigrette.<\/p>\n<p><strong>How to prepare quinoa for the Ancient Grain Salad:<\/strong><\/p>\n<p>1 carrot, peeled<br \/>1\/2 onion, peeled<br \/>1 celery stalk<br \/>1 bay leaf<br \/>1 cup red quinoa<br \/>1 1\/2 cups vegetable stock, seasoned lightly with salt and pepper<\/p>\n<p>Rinse quinoa well with cold water in a mesh colander. Add all ingredients to a sauce pot and simmer until quinoa is tender. Cool on a sheet tray, remove vegetables.<\/p>\n<p><strong>Chef Watterson\u2019s Herb Vinaigrette:<\/strong><\/p>\n<p>1\/2 cup champagne vinegar<br \/>1\/2 cup olive oil<br \/>1\/2 cup chopped fresh herbs<br \/>(parsley, chervil, tarragon, chives)<br \/>1 minced shallot<br \/>1\/2 teaspoon Dijon mustard<\/p>\n<p>Add all ingredients except oil to a blender and pulse fine. With blender running on low, slowly drizzle in oil until emulsified.
